Ingredients
  

For the Pumpkin Cake
  • 3 large free-range eggs
  • 180 g caster sugar
  • 120 g plain flour
  • 1 tsp bicarbonate of soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 120 g pumpkin purée tinned, not pie filling
  • 1 tsp vanilla extract alcohol-free
  • Icing sugar for dusting
For the Cheesecake Filling
  • 250 g full-fat cream cheese softened
  • 60 g unsalted butter softened
  • 120 g icing sugar sifted
  • ½ tsp vanilla extract alcohol-free

Method
 

  1. Prepare Your Baking Tin: Preheat your oven to 180°C (160°C fan/Gas Mark 4). Grease and line a 33x23cm (approx. 13x9 inch) Swiss roll tin with baking parchment, ensuring the parchment hangs over the short sides. Dust generously with icing sugar, tapping out any excess. This initial step is vital for easy rolling later, and you'll immediately notice the fine, powdery sheen across the parchment.
  2. Whisk the Eggs and Sugar: In a large bowl, whisk the eggs and caster sugar together using an electric mixer on high speed for about 5-7 minutes. The mixture should become very pale yellow, thick, and airy, almost like a light, fluffy cloud, significantly increasing in volume. When you lift the whisk, a ribbon of batter should fall and slowly dissolve back into the mixture.
  3. Combine Dry Ingredients: In a separate medium bowl, sift together the plain flour, bicarbonate of soda, baking powder, ground cinnamon, ginger, nutmeg, and cloves. The spices will release a wonderfully warm, earthy aroma as they fall through the sieve, signalling the autumn flavours to come.
  4. Fold in Pumpkin and Dry Mix: Gently fold the pumpkin purée and vanilla extract into the egg mixture until just combined. Then, gradually fold in the sifted dry ingredients in two additions, being careful not to overmix. Stop as soon as you see no streaks of flour; the batter will be a lovely, uniform light orange colour and quite thick.
  5. Bake the Cake: Pour the batter into your prepared tin, spreading it evenly to the corners with a spatula. Bake for 15-20 minutes. The cake is ready when it springs back lightly to the touch in the centre, and the edges are a delicate golden brown. Your kitchen will be filled with the most inviting, sweet spice scent.
  6. Roll the Warm Cake: While the cake is still warm from the oven, immediately invert it onto a clean tea towel generously dusted with icing sugar. Carefully peel off the baking parchment. Trim any crisp edges from the cake if desired. Starting from one of the short ends, tightly roll the cake and the tea towel together. Let it cool completely in this rolled position, about 1-2 hours. This step is crucial for training the cake to roll without cracking later – you'll feel the gentle warmth dissipating as it cools.
  7. Prepare the Cheesecake Filling: Once the cake is cool, beat the softened cream cheese, softened butter, sifted icing sugar, and vanilla extract together in a bowl using an electric mixer until light, smooth, and fluffy. The mixture should be bright white and hold soft peaks, smelling wonderfully sweet and creamy.
  8. Assemble the Roll: Carefully unroll the cooled cake. Spread the cheesecake filling evenly over the entire surface, leaving a small border (about 1cm) around the edges. Roll the cake back up tightly, without the tea towel this time. Wrap the finished roll tightly in cling film and refrigerate for at least 2 hours (or ideally overnight) to allow the filling to set and the flavours to meld beautifully.
  9. Serve: Before serving, dust generously with a final flourish of icing sugar. Slice with a sharp knife and enjoy!
