- Sift the matcha. Place your matcha powder into a small, dry bowl. Use a fine-mesh sieve to sift it over the bowl, gently tapping the side. This breaks up any clumps, ensuring a perfectly smooth latte without any gritty lumps. You'll see the fine, silky powder fall into the bowl.
- Add the hot water. Pour the 80°C water over the sifted matcha. The water should be steaming but not boiling, as boiling water will scorch the delicate leaves and introduce a harsh bitterness. You'll smell the first earthy, grassy aroma as the water hits the powder.
- Whisk with purpose. Using a bamboo whisk (chasen) or a small electric frother, whisk the matcha and water together in a gentle "M" or "W" motion. Do this for about 30-45 seconds. You're looking for a smooth, uniform paste with a thin, velvety layer of fine bubbles on top — it should look like a vibrant green, glossy paint.
- Sweeten to your soul. Stir in your chosen sweetener while the matcha mixture is still warm. The heat helps it dissolve seamlessly. Taste a tiny dab on your finger — it should be pleasant, with the sweetness balancing the earthy notes of the tea.
- Prepare your glass. Fill your serving glass to the brim with ice cubes. This step is crucial; the more ice, the colder and more refreshing the final drink will be.
- Pour the milk. Gently pour the cold milk over the ice. Watch the milk swirl around the cubes, creating a beautiful, frosty base. If you're using a plant-based milk, give it a good shake first to ensure it's smooth.
- Create the layers. Slowly pour the sweetened matcha concentrate over the back of a spoon held just above the milk. This technique helps the dense matcha sit on top of the milk in a distinct, vibrant green layer. The contrast between the white milk and the emerald top is stunning.
- Stir and enjoy. Before drinking, use a long spoon to stir the latte thoroughly, blending the sweet matcha with the cold milk. Listen to the gentle clink of the spoon against the glass. Take a moment to inhale the sweet, grassy fragrance before taking your first cold, creamy sip.
