- Prepare the acai base: Run the frozen acai packets under warm water for a few seconds to soften them slightly, then tear or cut them into chunks. This step ensures the blender doesn't strain. The aroma at this stage is deeply fruity, almost earthy—a promise of the richness to come.
- Blend the base: Place the acai chunks, frozen banana slices, frozen mixed berries, almond milk, and chia seeds into a high-speed blender. Start on low and gradually increase to high. Listen for the sound—it should be a thick, chugging rhythm, not a watery whir. If the blades struggle, add another tablespoon of almond milk, but no more. The colour should turn a deep, royal purple, and the texture should look like very thick soft-serve ice cream.
- Scrape and pulse: Stop the blender and use a spatula to scrape down the sides. Pulse a few more times until everything is completely smooth and you can see a glossy sheen on the surface. You should smell the sweet, tangy scent of the berries mingling with the creamy banana.
- Toast the toppings (optional but recommended): In a small, dry frying pan over medium heat, toast the shredded coconut and sliced almonds. Watch them closely—they will turn golden and fragrant within 2–3 minutes. The sound of them gently rattling in the pan is a comforting, crackling whisper. Once they smell nutty and warm, tip them into a bowl to cool.
- Assemble the bowl: Divide the thick acai mixture between two bowls. Use the back of a spoon to create a smooth, even surface with a slight well in the centre. The base should be so thick it holds its shape without spreading.
- Add the toppings: Artfully arrange your granola, toasted coconut, sliced almonds, fresh berries, and a drizzle of almond butter over the top. Finish with a tiny pinch of sea salt. The contrast of the cool, creamy purple base against the crunchy, warm-coloured toppings is a visual treat in itself.
- Serve immediately: This bowl waits for no one. Eat it right away while the toppings are still crunchy and the base is perfectly cold and luscious.
Notes
For a thicker consistency, use frozen banana and berries. Adjust sweetness with honey or maple syrup if desired. Toasted toppings add a lovely crunch and nutty flavor.
